This is a perfect pot for proofing sourdough starter. I have tried several other things in my kitchen but none have worked as well as this. The lid doesn't fit too tight which allows the fermentation gases to escape, but fits tight enough that the moisture created doesn't. I like the smooth rounded sides which make it perfect for stirring (with a non-metal spoon) and it is large enough for expansion of the sourdough when it really gets into action. I got this pot on a sale. The description states the Rick Bayless Bean Pot, Sol is a serving piece, so I didn't expect to use it to cook in. I love it as a cookie/cracker jar, with its scalloped rim and sunny color.

Please note that this is Chinese stoneware. You can't cook with direct heat with it. What this has to do with Mexican cooking is beyong me. It's pretty and has a nice color but as a tool in the Mexican kitchen, it's useless except maybe as a serving bowl.
